The traditional spirit from Vicenza is Grappa, obtained from the distillation of pomace, that is, the grape residue left over from winemaking. There are many different varieties, including single varietal grappas (produced from one type of grape) and those aromatized with herbs or fruit.
Other typical distillates include rosolio (liqueur made from rose petals); china (a bitter digestive liqueur made from Peruvian bark); kranebet (a white bitter liqueur made from alpine juniper, herbs and roots); genziana (made from gentian) and prugna (a distillation of plums).
