Fiolaro broccoli of Creazzo

This vegetable grows, between November and February, in small plots of land on the hills of Creazzo, a small town west of Vicenza. It belongs to the same family as the cauliflower, savoy cabbage and cabbage, except that the unusual microclimate of this area makes it extremely delicate on the palate. The broccoli is often prepared by local chefs as a side dish, but it is also an excellent ingredient for first and main course dishes, and even desserts.
