Mais Marano is a cross of two local corn varieties created way back in 1890. Mais Marano flour makes an excellent yellow polenta, a typical dish preferably prepared in a large copper pot where it simmers for just under an hour. A typical pairing in the local cuisine is with Vicenza-style stockfish (bacalà alla vicentina), and with all different kinds of meat dishes.
